The Hatzinikolaou family from Gera in Lesvos has been harvesting and producing unique single-varietal olive oil from our privately-owned, centuries-old olive groves in Stalos since 1900.
“Stalos” has a rare, rich fruity flavour with the strong aroma of tomato leaves, green almonds and the aromatic herbs that grow in the area. Its positive fruity, bitterish and spicy properties comprise its unique excellent quality. Green olive oil is a natural juice that maintains intact all the basic components of the olive fruit and therefore all the properties that are so beneficial to our health.
THE VARIETY
“Stalos” is a special single-varietal, extra virgin, green olive oil made from the centuries-old olive trees of the “kolovi” variety, in the Gera area of Lesvos. The unripe, green olives are collected by hand during the first month of harvest, usually in October and always in a limited quantity.
THE PROCESS
The daily harvest is taken to the olive mill right away where the cold press method ensures the unaltered taste, quality, unique aroma and light green colour of the oil. It is a limited quantity olive oil of the highest quality that is produced and stored under the strictest food health and quality control conditions.
